Jicama Lime Salad
Ingredients
- 1 medium jicama, peeled, julienned (about 4 cups total)
- 1 cup lightly packed fresh cilantro, chopped
- ¼ cup Olive & Marlowe Persian lime olive oil
- ¼ cup Olive & Marlowe 25 star white balsamic vinegar or Serrano chili honey vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- ¼ teaspoon sea salt
- Black pepper, to taste
Directions
- Combine jicama and cilantro in a large bowl. Whisk together remaining ingredients in a small bowl; pour over jicama mixture and toss well. Serve immediately.
