This medium-robust varietal has a perfect balance of bitterness, strong pungency, and intense green olive fruitiness, and is very high in polyphenols (second only to our Koroneiki).

Floral, with crisp notes of green banana, apple, mint, and black pepper flavors, with a long lasting, zingy cinnamon aftertaste.

Delicious in pesto, hummus, or for finishing pasta and meats.
